Whole Wheat Banana Chocolate Chip Pancakes Recipe
After much deliberation, I worked up two New Year’s Resolutions this year.
Yep. Two. {I like to keep things simple around here.}
They are (in no particular order):
1) Learn to take better pictures.
2) Learn some new and healthier breakfast recipes for the whole family.
I decided to jump in with both feet and try to tackle both of them with this post.
I spent some time pinning healthy breakfast recipes last week and when I discovered this recipe, I knew it was love at first sight. The idea of plain whole wheat pancakes doesn’t make me do backflips, but the addition of bananas makes up for all of that, doesn’t it?
Although the original recipe did not call for chocolate chips, there was no question in my mind when I made them – they NEED chocolate chips. They BEG for chocolate chips. If that’s wrong, I don’t want to be right. 🙂 (If this moves them out of the healthy breakfast category, so be it. They are so worth it.)
Try them. You’ll see what I mean.
And stay tuned for more healthy breakfast recipes soon…
Ingredients
- 2 cups whole-wheat flour
- 2 teaspoons baking powder
- 1 ½ teaspoons baking soda
- ½ teaspoon salt
- 1 tablespoon honey
- 2 large eggs, lightly beaten
- 1 ¾ cups milk
- 2 tablespoons unsalted butter, melted plus butter for frying
- 2 ripe bananas, mashed
- 1 cup chocolate chips
- 100% pure maple syrup for serving
Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Make a "well" in the center of the flour mixture and pour in the honey, eggs, milk, and 2 tablespoons of melted butter.
- Whisk together thoroughly, but do not overmix.
- Gently fold the mashed bananas into the batter.
- Heat a griddle to medium-high heat. Swirl enough butter around the pan until it is well coated. Add pancake batter.
- Add a handful of chocolate chips to each pancake. When the pancakes have begun to brown on the bottom, flip them over to cook the other side.
- Serve with warm maple syrup.
