Quick & Healthy Granola Recipe (Delicious!)

One year I received a jar of this granola as a Christmas gift from one of my preschool students. So thankful the mom attached the recipe because it’s delicious. This is a super quick, throw together type of granola – just dump and bake! I love those types of recipes.

Here are your ingredients: oats, almonds, quinoa, wheat germ (or I used flax), pecans, mini chocolate chips, honey, oil (I used coconut), vanilla & cinnamon.

Mix oil, honey and vanilla with a fork. You can use vegetable or canola oil but if you are using coconut like I did then you’ll have to heat it a little bit until it melts and becomes liquid, then mix in with the honey and vanilla.

In a separate large bowl mix together all the dry ingredients (except chocolate chips) then add your honey mixture. Mix well to coat and pour all of it onto a lightly greased baking pan.

Bake that goodness for 30 minutes, tossing every 10 minutes.

Cool, mix in the chocolate chips and eat!

I love this granola sprinkled over greek yogurt and fruit – the perfect snack!

Quick & Healthy Granola

Ingredients

  • 2 heaping cups old-fashioned oats
  • 1 cup almonds, slivered, sliced or coarsely chopped
  • 1/2 cup quinoa, uncooked
  • 1/2 cup wheat germ or flax
  • 1/2 cup pecans, coarsely chopped
  • 1/2 cup mini chocolate chips
  • 1/4 heaping cup honey
  • 2 Tablespoons oil (vegetable, canola or coconut)
  • 1 teaspoon vanilla
  • Cinnamon, to taste

Instructions

  1. Preheat oven to 300 degrees & lightly grease a large baking sheet
  2. Mix oil, honey & vanilla with a fork
  3. In a large bowl, mix dry ingredients
  4. Combine all ingredients (except chocolate chips) and mix well
  5. Put mixture on baking sheet and bake for 30 minutes, tossing every 10 minutes
  6. Let cool, add chocolate chips and ENJOY!

Simple Snack Idea: Herbed Snacker Crackers

I had a friend in elementary school who used to bring this snack to school. I remember looking at it coveting the smell and the buttery looking texture. One day she gave me some to try and I couldn’t believe how delicious these little homemade snack crackers were. Every once in a while I would remember that snack and wonder how her mom made it. Lo and behold I was recently paging through one of my most beloved cookbooks, found myself in a section I rarely go to and there, there was THE recipe! I couldn’t believe my good fortune. Lucky for you I am going to share it!

This recipe couldn’t be any easier, kids can make it and there is no need for a stove or oven – BINGO!

Here’s your short list of ingredients: Oil (I used olive), garlic, oyster crackers, salad dressing mix, dried dill & granulated garlic.

Measure out your oil and add a thinly sliced garlic clove. Allow the clove to sit in the oil for about 30 minutes, discard the garlic and save the oil.

Pour crackers into a medium bowl and sprinkle the oil throughout, stirring occasionally.

Combine seasoning packet with the dill & granulated garlic, sprinkle onto the oil-covered crackers, stirring often.

Allow crackers to sit for about 30 minutes, stirring every 10 minutes to keep the crackers evenly saturated.

That’s it! Store in an airtight container (If they make it that long!).

Herbed Snacker Crackers

Ingredients

  • 1/3 cup oil (vegetable or olive)
  • 1 clove garlic, thinly sliced
  • 1 (11 oz) package oyster crackers
  • 1 (0.7 oz) envelope Italian Seasoning Mix (I used Good Seasons Italian)
  • 1 teaspoon dried dill
  • 1/4 teaspoon granulated garlic

Instructions

  1. Combine oil & garlic; let stand 30 minutes. Discard garlic & save oil.
  2. Place crackers in a bowl; sprinkle with oil and stir.
  3. Combine dressing mix, dill & granulated garlic in a small bowl; sprinkle over crackers stirring well.
  4. Let stand 30 minutes, stirring every 10 minutes.
  5. Store in an airtight container.
  6. Yield: 6 cups
